The story
Origin and evolution
Rum grew out of Caribbean sugar production, distilled from molasses and fresh cane.
Lighter Cuban-style rums, filtered and briefly rested, defined the clean white category.
The daiquiri and mojito made white rum the backbone of tropical bartending.
